Yes, those would do nicely. Of course, one only needs one fiber optic, but two focusing from different angles is ok as well.
I would also like it if the fiber optics were longer, so that I could sit the light source far enough away that it doesn’t risk falling or getting moved around all that much, while I work.

As long as you have the light source, you are ok. You can order fiber optic cable to size. You can even find them on Ebay in sizes up to 6 feet as far as I have seen.

Yes, finding the nice pretty SS covered gooseneck stuff is a wainting game, but you often find stuff like Ebay Item # 220350017663 requently.
